soup. You can add prepared white rice for the last thirty minutes or so of cooking if you like a bulkier/heartier soup. That adds quite a few calories though.

Recipe Ingredients for Tortilla Soup

15 1/4 g black beans
8 oz tomato sauce
5 oz enchilada sauce
1/2 onion, chopped
2 oz green chiles
1 clove garlic, minced
1 cup water
1 cup chicken broth
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/8 teaspoon black pepper
10 oz. corn
1 teaspoons chopped cilantro
2 tortillas
1 teaspoon vegetable oil

Recipe Directions for Tortilla Soup

  1. Place all ingredients except for tortillas and oil in slow cooker. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

  2. Preheat oven to 400 degrees F (200 degrees C).

  3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.

  4. Bake in preheated oven until crisp.

  5. To serve, sprinkle tortilla strips over soup. Sprinkle with cheese if you'd like.
