brothy soup with home made tortillas. Fresh and tasty. Would be great with some avacado and my husband makes a cheese tortilla for dipping, but I pass.

Recipe Ingredients for Tortilla Soup

4 cups chicken broth
2 T garlic, minced
2 T jalapeno, minced
3 corn tortillas
1 T canola oil
1/2 t salt
1 chicken breast
1/4 cup onion, diced
1/4 cup cilantro, chopped
1 pinch oregano
1 pinch chili powder

Recipe Directions for Tortilla Soup

  1. Put the broth, garlic and jalapeno in a pot and set on the stove to boil.

  2. Boil the broth down until you have just over 2 cups or so.

  3. Meanwhile, slice the tortillas in half and then into strips. Heat oil in a frying pan and then add tortillas. Cook until crisp, tossing with tongs frequently.

  4. Remove tortillas onto a paper towel lined plate and set aside.

  5. Add chicken to same pan and saute with a little salt and pepper until cooked through. Remove from pan, let cool a few moments and then cube or shred.

  6. Split the chicken, onion and cilantro between two soup bowls.

  7. Fill the bowls with broth and serve with tortilla chips made earlier and dried oregano and chili powder for each person to add to taste.
