Tortilla Soup Recipe

This is not your ordinary tortilla soup.

Recipe Ingredients for Tortilla Soup

1 cup carrot, diced
1 cup celery, diced
1 cup onion, diced
1 T. fresh cilantro, chopped
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
1 cup frozen corn
60 ounce fat free chicken broth (4 cans)
15 ounce diced tomatoes
10 ounce Rotel tomatoes
3/4 ounce taco seasoning (1/2 packet)
8 corn tortillas, cut into pieces (10 count pkg.)
26 ounce chicken, diced (frozen pre-cooked chicken fajita meat
1 cup skim milk
8 ounces monterey jack cheese, shredded

Recipe Directions for Tortilla Soup

  1. In large skillet, sauté carrots, onions, celery in oil, garlic, salt and pepper until tender. Pour into large pot.

  2. Add corn, chicken fajita meat, chicken broth, diced tomatoes, Rotel tomatoes, cilantro and ˝ packet taco seasoning and bring to boil

  3. Cut tortillas into small pieces and add to broth mixture. If thicker soup is desired, use 10 tortillas.

  4. Let boil for 15 minutes or until tortillas are thoroughly incorporated into soup stirring occasionally to keep from sticking. (Tortillas will dissolve in soup mixture.)

  5. Reduce heat and add 8 oz. cheese. Simmer for additional 10 minutes.

  6. Add milk and simmer for additional 5-10 minutes.

  7. Garnish with shredded cheese and broken tortilla chips.

  8. You can also use grilled chicken fajita meat instead of frozen fajita meat.
