This recipe is based off of Pappasito's Cantina's recipe for tortilla soup.

Recipe Ingredients for Tortilla soup

12 cups chicken broth
2 cups white onion
1 cups carrots
3 cups zucchini
3 cups squash
1 cups kernel corn
2 tablespoons salt
2 cups stewed tomatoes
2 pepper, jalepenos

Recipe Directions for Tortilla soup

  1. In a large pot, bring chicken broth, carrots and onion to a boil. Cook until carrots are tender.

  2. Add sliced zucchini, sliced squash, corn, tomatoes, diced jalepeno and salt.

  3. Reduced to a simmer and cook until vegetables are tender. Remove from heat and let cool until desired temperature.
