Although it's served hot, this south-of-the-border treat is perfect for the summer nights as well as chillier evenings.

Recipe Ingredients for Tortilla Soup

14 oz chicken broth
14 1/2 oz Mexican tomatoes, stewed undrained
1/2 cup prepared salsa or picante sauce
1 tsp ground cumin
10 oz corn tortillas
1 cup Monterey Jack cheese, preshredded
1/2 cup thinly sliced green onion
1/2 cup cilantro, coarsely chopped

Recipe Directions for Tortilla Soup

  1. Combine broth, tomatoes, salsa and cumin in a medium saucepan. Cover and bring to a boil over high heat. Reduce heat to low and simmer for 10 minutes, stirring occasionally. While soup is cooking, cut tortillas into 1" wide squares and place in soup bowls. Place cheese over tortillas in soup bowls. After soup had simmered for 10 minutes, stir in green onions and cilantro. Ladle soup into soup bowls over cheese ans tortillas

  2. Serving Suggestions: Serve with line wedges and a crisp vegetables salad with a lime vinaigrette dressing
