Recipe Ingredients for Tortilla Soup

32 oz tomatoes
16 oz tomato paste
32 oz chicken broth
15 oz corn
4 oz diced green chiles
15 oz black beans
1 cup salsa
1 lb chicken breast, cooked and shredded
1 tbsp oregano
1/2 tsp cumin
2 tsp salt
1/2 tsp pepper
1 tsp chili powder
2 cloves garlic
2 tbsp sugar

Recipe Directions for Tortilla Soup

  1. Fill half a large pot with water, bring to a boil. Add frozen chicken breasts, turn down heat just slightly, and let cook (with lid partially off) for 45 mins to 1 hr. Remove chicken, place in strainer to cool.

  2. Discard half the hot water, and add all the ingredients listed above (except the avocado, chips, cheese, and sour cream) to the remaining water in the pot. When the chicken is cool enough to handle, shred it and add it to the pot as well. Let soup simmer on medium heat until everything is warmed through.

  3. Serve with cheese, avocado, chips and sour cream (optional) and enjoy!
