Imitaion of Rumbi Island Grill's Tortilla Soup

Recipe Ingredients for Tortilla Soup

32 oz Chicken
9 tsp Chicken Base
1 small Onions
2 stalk, large (11"-12" long) Celery
0.75 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
6 Teaspoon Juice
0.67 cup Coconut Milk
1.764 oz Cilantro
1 tbsp Salt, Table
1/4 tsp Spices Ground Black Pepper

Recipe Directions for Tortilla Soup

Boil chicken in water until cooked, remove and dice. Return chicken to broth, add chicken base, salt and pepper. Chop onions, pepper, and celery, add to broth, cook until tender. Add coconut milk, 1/3 bunch chopped cilantro, juice of 1 lime or 1/2 lemon. Remove from heat and serve with crunchy tortilla strips or crushed chips.
