Recipe Ingredients for Tortilla Soup, with Chicken and Vegetables

3 quarts water
1 onion, diced
4 cloves garlic, minced
4 stalks celery, chopped
1/2 cup shallots, diced
1 cup green beans, chopped
1 zucchini, chpped
28 oz diced canned tomatos
10 oz frozen corn
2 cups cilantro, chopped
1 cup green onion, chopped
2 cups cooked brown rice
3 cups chicken breast, pre-cooked and chopped
1 red bell pepper
8 corn tortillas
2/3 cup cheese
3 chicken bouillon cubes
1/2 tsp ground cumin
1/2 tsp cayenne pepper
1/2 tsp white pepper

Recipe Directions for Tortilla Soup, with Chicken and Vegetables

  1. In a large pot add water, onion, garlic, shallots and celery. Bring to boil on high heat, reduce to low, cover and simmer 30 min.

  2. Add canned tomatos with juice (with or with out chilis), zucchini, red bell pepper, green beans, cumin, white pepper, ceyenne pepper, bouillon cubes and diced chicken. Cover and simmer 30 min.

  3. Chop corn tortillas into strips bake at 350 until crunchy, 10-15 min.

  4. Add corn, cilantro, green onion and cooked rice. Salt to taste if desired. Let it simmer 10 min more (or longer)

  5. Ladle into bowels, garnish with torilla strips and shredded cheese.
