Yummy tortilla soup recipe base. At serving time, add as many garnishes as you wish (and add their calorie content) Suggested garnishes: tortilla strips, cilantro, shredded Monterrey Jack cheese, diced avacado, a squeeze from a lime slice. Sour cream is good, too.

Recipe Ingredients for Tortilla Soup (base)

8 cups chicken broth
3 jalapeno peppers (minced)
3 cups shredded chicken
2 med onions (chopped)
3 cloves of garlic (minced)
3 tbs olive oil
3 tbs cumin
2 tbs chili powder
12 oz can diced tomatoes
4 tbs of chopped fresh cilantro
1/8 tsp Kosher salt
1/8 tsp Fresh Ground Pepper
1/2 cup fresh lime juice (this is a guess - juice from 2 limes)

Recipe Directions for Tortilla Soup (base)

  1. Put oive oil in a pan and add the onions, sprinkle the onions with salt to help them sweat. Cook over medium low heat for about 3 minutes, then add the minced peppers and garlic. Continue cooking over med-low until the onions and peppers are soft.

  2. In a large soup pot put the chicken stock/broth and add the cumin, chili powder, chopped cilantro, Rotel tomatoes and onions/pepper/ garlic. Take 1 or 2 of the limes, juice them and add that to the pot. Bring it all to a simmer for about 30 minutes, and the salt and pepper and then test your spices. Now add the chicken and let it simmer.

  3. Ladle soup into bowls and garnish as you wish with some tortillas strips on top and garnish with cheese, cilantro, diced avocado and a squeeze from a lime wedge. Sour cream is good too.

  4. Enjoy!
