Low calorie, Mexican inspired soup.

Recipe Ingredients for Tortilla Soup 2

1 onion
1 T garlic
1 cup celery
1 cup carrots
2 jalapeno peppers, deveined, seeded,chopped fine
8 cups low sodium chicken broth
1 cup frozen corn
15 oz black beans, drained
10 oz Rotel tomatoes
15 oz diced tomatoes (do not drain)
4 oz chopped green chilies
1 tsp cumin
1 T chili powder
1/2 tsp coriander
1 tsp salt (or to taste)
1 T cilantro (dried or fresh)
8 oz chicken breasts, cooked and shredded

Recipe Directions for Tortilla Soup 2

Dice and saute onion, garlic, celery, carrots, jalapenos. Add to pot with 8 cups chicken broth and rest of ingredients. Bring to boil, and then simmer for 30-60 minutes.
