Recipe Ingredients for Tortilla Salmon

8 ounces onion
8 ounces potato, sliced very thin
3/4 cups skim milk
1 cup egg beaters
4 ounces cooked salmon
1 tsp flour
1/4 tsp nutmeg
1 ounce parmesan cheese
1/4 cup parsley
1 tsp fresh dill

Recipe Directions for Tortilla Salmon

  1. Preheat oven to 325.

  2. In a skillet over medium low cook onions until translucent. Remove and let cool.

  3. Arrange potato slices in the pan, forming a crust. Cook potatoes until just browned, about 10 minutes. Top with onions and crumbled salmon.

  4. Whisk together milk, egg substitute, flour, parsley, dill, and nutmeg. Pour carefully over onions.

  5. Bake for 45 minutes, or until set.

  6. Sprinkle with cheese and broil for 2 minutes, or until cheese is melted.
