Good quiche for breakfast, lunch or dinner

Recipe Ingredients for Tortilla Quiche

5 flour tortillas
6 eggs
1/2 cup 2% Small Curd Low-Fat Cottage Cheese
1/2 cup whipping cream
1 tsp. chili powder
1 cup colby jack cheese, shredded
4 oz g) chopped green chilies
3/4 pound bulk pork sausage

Recipe Directions for Tortilla Quiche

  1. Spray pie plate with cooking spray.

  2. Arrange 4 tortillas in the bottom so they overlap and extend about 1/2 inch over edge of pie plate. Lay fifth tortilla over the middle.

  3. Brown the sausage and drain it really well.

  4. Place sausage, green chilies and shredded cheese on top of tortilla crust.

  5. In a bowl, mix eggs, cream, cottage cheese and chili powder.

  6. Pour the egg mixture slowly over ingredients in crust.

  7. Bake at 375F for 45 minutes until golden brown and puffy.

  8. Cut into wedges and serve.
