Recipe Ingredients for Tortilla quiche

21 g 6" corn tortilla (1)
1 ounce chopped ham
1 ounce sharp cheddar, lowfat, shredded
63 g jumbo egg (1)
1/4 cup half and half

Recipe Directions for Tortilla quiche

  1. Preheat oven to 350 degrees. Spray a 5" diameter ramekin with cooking spray. Heat 1 corn tortilla in microwave for 15 seconds to soften. Place tortilla in prepared ramekin, pushing down to bottom and allowing tortilla edges to fold up, becoming the rim of the crust.

  2. Place 1 ounce chopped ham or cooked sausage or bacon and 1/4 cup grated low fat cheddar cheese evenly over bottom of crust.

  3. (Optional: place 2 tablespoons sauteed onions and peppers over cheese.)

  4. Beat to gether the egg and cream, and beat in salt and pepper to taste. Pour carefully over the ham and cheese. Do not worry if some of it overflows the crust and runs underneath.

  5. Bake for 30 minutes, until puffed up and toothpick inserted in center comes out clean.

  6. May serve immediately from ramekin, or let cool 3 minutes and remove to plate with spatula. Cut in half to serve unless you want to eat the whole thing. I couldn't!
