Recipe Ingredients for Tortilla Pie

1 pound Ground Beef, lean
1/2 cup Onion, chopped
2 Garlic Cloves, minced
29 oz diced Tomatoes (Canned, Italian or Mexican)
1 teaspoon Chili Powder
1/2 teaspoon Ground Cumin
3/4 cup Ricotta Cheese (Part Skim)
1/4 cup Mozzarella, Part Skim Milk Cheese (shredded)
3 tablespoons Fresh Cilantro, minced & chopped
8 Corn Tortillas
1/2 cup Cheddar Cheese (Reduced Fat, Shredded)

Recipe Directions for Tortilla Pie

  1. Cook beef in skillet, drain.

  2. Add Onion and garlic, cook.

  3. Add tomatoes, chili powder and Cumin, bring to a boil and take off heat.

  4. Mix Ricotta, Mozzarella and 2 Tbsp cilantro in separate bowl.

  5. Put 2 tortillas in casserole dish sprayed with non stick spray.

  6. Layer tortillas with 1/2 meat sauce.

  7. Put two more tortillas on top, layer with all of ricotta mixture.

  8. Put two more tortillas on top, layer with rest of meat sauce.

  9. Put two more tortillas on top, layer with cheese and rest of cilantro.

  10. Bake for 15 minutes at 400.
