A cross between a Spanish omelet and a French Quiche.

Recipe Ingredients for Tortilla Lorraine

10 g (2 slices) bacon
8 ounces onion
8 ounces potato, sliced very thin
3/4 cups skim milk
1 cup egg beaters
3 ounces Gruyere cheese, grated
1 tsp flour
1/4 tsp nutmeg

Recipe Directions for Tortilla Lorraine

  1. Preheat oven to 325.

  2. In a skillet over medium high heat, cook the bacon until crisp. Remove and let cool.

  3. Discard fat from pan, reduce heat to medium low and cook onions until translucent. Remove and let cool.

  4. Arrange potato slices in the pan, forming a crust. Cook potatoes until just browned, about 10 minutes. Top with onions and crumbled bacon.

  5. Whisk together milk, egg substitute, cheese, flour, and nutmeg. Pour carefully over onions and bacon.

  6. Bake for 45 minutes, or until set.
