Any afficianado of Spanish tapas knows this dish well. It's a staple of bars across Spain and it's pretty healthy, too!

Recipe Ingredients for Tortilla Española

10 eggs
1 large potato
2 spring onions
1/4 cup olive oil
1/4 tsp salt
1 tsp pepper
1 tsp paprika

Recipe Directions for Tortilla Española

  1. Cut potato into thin slices, then cut these into small squares, about 1cm x 1 cm.

  2. Dice spring onions.

  3. Heat olive oil over medium, then add onions and potatoes and cook until tender but not browned, about 5 minutes. Remove from heat and put aside.

  4. Crack 10 eggs and whisk together until well-beaten. Add onions & potato and mix well. Add spices and mix.

  5. Put the pan you used for the onions & potatoes back on the burner, over medium heat, and add egg mixture. Cook over low-medium until bottom begins to brown, then flip over. With larger portions this may be difficult, so flip portion by portion if need be and then push together so it solidifies.

  6. Once the egg has cooked all the way through, remove it from heat, divvy up, and serve!
