Low fat version with broccoli. Serves 2-3 as a main course with toast, oatmeal or fruit. 4-6 as a side. The nutrition rating is for 4.

Recipe Ingredients for Tortilla Espanola

1 medium red potato
1 egg
3/4 cup Egg beaters
1 cup broccoli
1 small onion

Recipe Directions for Tortilla Espanola

  1. Boil potato. Slice.

  2. Add 1 cup broccoli floretsand one small onion to saute pan with water. Cook until tender. Drain water if needed. Add potato slices. Sprinkle with desired spice. I like smoked paprika. Spray all with Pam, including pan bottom.

  3. Mix eggs. Add desired salt and pepper. Pour onto veggies. Cook over low heat, dislodging edges of omelette to allow uncooked egg to flow underneath at intervals around omelette.

  4. When mostly cooked, cover and cook a few minutes longer.
