Recipe Ingredients for Tortilla Espanola

45.081 oz Potatoes, White, Flesh And Skin
1 large Onions
6 large Egg, White
6 oz Olive Oil, Extra Virgin, Organic
1 serving Ground Cumin

Recipe Directions for Tortilla Espanola

  1. Thinly slice potatoes and onions, and slow sautee in oil for 45 minutes. Sprinkle with salt.

  2. Drain potato mixture and then toss with lightly beaten eggs and cumin.

  3. Return, with one tablespoon of drained oil, to pan. Poke potatoes and onions to be "inside" the eggs. Cook, covered, over low heat until firm, 15 to 20 minutes.

  4. Turn off heat and let omelette set. Either flip it (good luck) or, without a lid, put the omelette into a broiler for 5 minutes to set from the top and slightly brown.

  5. Cool and slice. Best served at room temp.
