Spanish egg and potato dish with healthy olive oil. Add herbs and spinach if desired. Tastes great with a savory vegetable dish or pasta salad.

Recipe Ingredients for Tortilla Espanola

2 eggs
8 egg whites
3 medium potatoes
1 large onion
8 tbsp extra virgin olive oil

Recipe Directions for Tortilla Espanola

  1. Heat 1/2C. olive oil in cast iron skillet at moderate-high heat. Thinly slice potatoes and onion and alternate layers in pan. Cook until softened, but not brown. Pour off remaining olive oil for later use.

  2. Beat eggs until mixed and put cooked potato and onion mixture into eggs. Let rest for 10-15 minutes.

  3. Reheat skillet with 2 Tbsp olive oil and pour mixture into skillet. Cook until bottom begins to brown and sides begin to dry. Use plate to flip tortilla to other side, adding another 2 Tbsp oil to pan, and cook again until beginning to brown. Flip 2 to 3 more times, without adding more olive oil.
