Recipe Ingredients for Tortilla Espanola

5 medium potatoes, sliced
1/2 onion, sliced
1/4 yellow pepper, sliced
6 eggs, slightly beaten
1/2 cup milk
1/2 cup olive oil

Recipe Directions for Tortilla Espanola

  1. Fry potatoes, onions and peppers in oil over medium heat until tender, but not browned.

  2. Using slotted spoon, spoon potato mixture into quiche pan. Scramble eggs and milk together. Pour eggs over potatoes, let rest 10 minutes.

  3. Bake, uncovered, 15 minutes in 350 degree preheated oven or until eggs are set. Can be served warm or cold.
