A layered casserole dish using tortillas instead of noodles. Originally from a Junior League of Springfield (MO) cookbook, I made a few variations (adding corn, using multi-grain tortillas). The serving size is variable, but I based it on my typical consumption. This is *filling*.

Recipe Ingredients for Tortilla Casserole (Mexican Lasagne)

1 lb ground turkey
1 small onion, chopped
1 tsp garlic, minced
1/2 cup green bell pepper, chopped
14 oz tomatoes and green chilies
1 tsp cumin, ground
14 oz black beans, organic, drained
14 oz corn, organic, drained
6 multi-grain tortillas
6 oz Kraft Natural Shredded Cheese, divided
10 cups romaine lettuce, chopped

Recipe Directions for Tortilla Casserole (Mexican Lasagne)

  1. Preheat oven to 350 degrees F.

  2. Brown turkey and drain.

  3. Add onions and garlic; cook until onions are mostly clear.

  4. Add pepper, tomatoes and green chilies, beans, corn and cumin. Cook until heated through.

  5. Spread 1/3 of meat mixture on the bottom of an ungreased 13x9 pan. Layer half of the tortillas on top; spread 1/3 of meat mixture on top of the tortillas. Cover with 1/2 of the cheese.

  6. Layer remaining tortillas over cheese; cover with remaining meat mixture and top with remaining cheese.

  7. Bake at 350 until hot through, about 20-25 minutes. Serve with lettuce and other toppings (sour cream, olives, chopped tomatoes, etc.) as desired.

  8. Note: Toppings other than lettuce are not included in the nutritional information.
