Recipe Ingredients for Tortilla-Black Bean Casserole

2 c chopped onion
1 1/2 c chopped sweet green pepper
14 1/2 oz diced tomatoes, undrained
3/4 c salsa
2 tsp cumin
2 cloves garlic, minced
30 oz black beans, rinsed and drained
12 corn tortillas
2 c Monterey Jack cheese, shredded
2 medium tomatoes, chopped

Recipe Directions for Tortilla-Black Bean Casserole

  1. Heat the oven to 350 degrees.

  2. In large skillet, combine onion, green peppers, tomatoes, salsa, cumin, and garlic. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Stir in beans.

  3. Spread 1/3 of bean mixture over the bottom of a 3-qt. rectangular baking dish. Top with 6 of the tortillas, overlapping as necessary, and 1 cup of cheese. Add another 1/3 of the bean mixture; top with remaining 6 tortillas and remaining bean mixture.

  4. Bake, covered, in oven for 30-35 minutes or until heated through. Sprinkle with remaining cheese. Let stand for 10 minutes.

  5. If desired, top with chopped tomato, lettuce, green onions, olives and sour cream.
