This Tex-Mex dish can also be served as a side dish for 12. Prep: 25 minutes, Bake: 30 minutes, Oven: 350.

Recipe Ingredients for Tortilla-Black Bean Casserole

2 cups chopped onion
1 1/2 cup sweet pepper, green 2 medium sized chopped
14 1/2 ounce tomatoes, canned cut up undrained
3/4 cup salsa, or picante sauce
2 tsp cumin
2 cloves garlic
30 ounces black beans, canned rinsed and drained (can use kidney beans)
12 spelt tortillas
8 ounces monterey jack cheese , shredded

Recipe Directions for Tortilla-Black Bean Casserole

  1. In a large skillet combine onion, bell pepper, undrained tomatoes, salsa, cumin, and garlic. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Stir in beans.

  2. Spread one-third of the bean mixture over the bottom of a 3 quart rectangular baking dish. Top with 6 of the tortilla's, overlapping as necessary, add 1 cup of the cheese. Add another one-third of the bean mixture; top with remaining 6 tortillas and remaining bean mixture.

  3. Bake, uncovered at 350 for 30-35 minutes or until heated through. Sprinkle with remaining 1 cup of cheese. Let stand 10 minutes before serving.

  4. OPTIONAL: If desired top with chopped tomatoes, shredded lettuce, olives, and sour cream. Don't forget to add these additional calories if you do!
