Recipe Ingredients for Tortilla Bake

Recipe Directions for Tortilla Bake

  1. Preheat oven to 350.

  2. Lightly spray small casserole dish and put a small amount of "cheese" sauce (this recipe will use 3 servings of this sauce -- separate recipe) and salsa in the bottom of the dish.

  3. Lay down two corn tortillas, add more "cheese sauce" and salsa. Sprinkle with black beans.

  4. Repeat this process til casserole dish is full.

  5. Bake, covered, at 350, for 20 minutes. Remove cover and bake for another 10-15 minutes.

  6. Sprinkle with nutritional yeast and serve with homemade guacamole and salad for a cull meal.

  7. FYI: the 3 servings of "cheese" sauce will add approximately another 140 calories/serving to the total indicated for this recipe.
