Recipe Ingredients for Tortellini Vegetable Soup

1 1tsp Olive Oil
6 medium Carrots
6 stalk, large (11"-12" long) Celery
1 large Onions
24 cup Chicken Broth
453 grams Three Cheese Tortellini
3 cups Spinach Baby
0.062 cup Lemon Juice

Recipe Directions for Tortellini Vegetable Soup

  1. Ingredients

  2. 1 Tbsp. olive oil

  3. 6 carrots cut into 1/4-inch thick slices

  4. 6 ribs celery cut into 1/4-inch thick slices

  5. 1 large (or 2 small) onion coarsely chopped

  6. 2-4 cartons (48 oz. each) chicken broth

  7. 1 lb. frozen cheese tortellini

  8. 1 pkg. (approximately 3 cups) baby spinach

  9. 1 Tbsp. lemon juice

  10. Directions:

  11. 1. In large pot, heat oil over medium heat. Add carrots, celery, onion, salt and pepper. Cook, stirring until softened (5-8 minutes).

  12. 2. Add broth until the soup is at your desired thickness (just remember that the tortellini will absorb some of the liquid and make it thicker). Bring to a boil for 5-8 minutes.

  13. 3. Add tortellini and cook until tender according to package directions. Stir in spinach and lemon juice. Add salt and pepper to taste.

  14. **Note ? I love making soups in large batches and freezing portions to reheat and eat later. If you are making a large batch of this soup, DO NOT add the tortellini to the portions you plan to freeze. When the tortellinis are cooked and reheated, they get soggy and fall apart. So, be sure to freeze portions without the tortellini, then simply add them later when you reheat and serve. This way your soup will always turn out perfect!
