Recipe Ingredients for Tortellini Salad With Tomato Vinaigrette

1/2 lb frozen cheese tortellini, preferably whole-wheat
1/2 cup sun-dried tomatoes
7 oz artichoke hearts, rinsed and quartered
3 1/2 oz roasted red peppers, rinsed and chopped
1 tomato, seeded and chopped
2 scallions, coarsely chopped
1/2 tbsp dried basil
1/2 oz prosciutto, trimmed and julienned
1 pinch of salt
1 pinch of black pepper
1 ripe tomatoes, halved and seeded
1 tbsp red wine vinegar
1/2 tbsp extra-virgin olive oil
1/2 tsp dried oregano
1 clove garlic, minced
1 pinch of salt
1 pinch of black pepper

Recipe Directions for Tortellini Salad With Tomato Vinaigrette

  1. Bring a large pot of water to a boil. Cook tortellini until just tender, 8-12 minutes. Drain, rinse under cold water, and transfer to a bowl.

  2. Place sun-dried tomatoes in a bowl, cover with boiling water for 30 minutes, drain, and coarsely chop.

  3. Add sun dried tomatoes, artichoke hearts, roasted red peppers, 1 tomato, scallions, basil, prosciutto, salt, and pepper to the tortellini.

  4. To prepare Vinaigrette: Grate tomato halves until only the skins remain, discard skins. Add vinegar, oil, oregano, garlic, salt, and pepper to the tomato juice; whisk until blended.

  5. Add the Vinaigrette to the tortellini and toss.
