Recipe Ingredients for Tortellini Salad


Salad:
20 ounces Pasta Prima rainbow cheese Tortellini, refrigerated pasta, cooked and cooled
1 cup chopped sweet bell pepper (any color)
1 cup brocolli florets, fresh, cut small
1 cup zucchini, cut lengthwise and sliced
1 cup yellow squash, cut lengthwise and sliced
1 cup sugar snap peas, fresh
1 cup baby spinach, sliced
15 baby carrots, slivered lengthwise (medium)
6 ounces marinated artichoke hearts, quartered
1/4 cup diced onion
1/2 cup sliced black olives
1/4 cup pine nuts, toasted
4 ounces crumbled reduced fat feta cheese

Dressing:
1/2 cup olive oil
1/2 cup white balsamic vinegar
1 teaspoon dried oregano (fresh lemon thyme is a great substitute)
3/4 teaspoon minced garlic
1 dash sea salt, to taste
1 dash black pepper, freshly ground

Recipe Directions for Tortellini Salad

  1. Prepare tortellini according to package, and drain. Prepare vegetables, and add to cooled pasta. Drain artichoke hearts, reserving liquid that CAN be used as a replacement for the water. Add artichoke hearts, spinach, tomatoes, and pine nuts to pasta mixture.

  2. In separate bowl, wisk olive oil and water (or substitute with artichoke marinade), vinegar, and spices.

  3. Toss dressing with pasta mixture. Makes 8 dinner servings.

  4. OPTIONAL: top with 1 teaspoon grated parmesan cheese.

  5. HINT: Best if prepared a day ahead, so the flavors meld.
