This is delicious! I was unable to add the correct tortellini into the recipe because I am new to the website. So just add in the tortellini of your choice separately (that is what I'm going to do) 8 Servings of this soup is about two cups each Also, the more veggies, the better!

Recipe Ingredients for Tortellini Minestone Soup

1 red onion, chopped
2 garlic cloves, chopped
1 cup parsley, chopped
29 oz tomato puree
2 quarts vegetable broth
5 carrots, sliced
5 celery stalks, sliced
15 oz chili beans, drained
1 tsp salt
1/2 tsp pepper
1 tbsp oregano
1 tbsp basil
2 tsp olive oil

Recipe Directions for Tortellini Minestone Soup

  1. Saute onion, parsley, and garlic in oil in large stock pot.

  2. Add celery, carrots, broth, and tomato puree along with herbs, simmer approximately 45-60 minutes.

  3. When vegetables are just about tender, add the tortellini and beans until cooked.

  4. *Optional: Top with fresh Parmesan cheese.
