only using 1 tbsp oil and no parmesan

Recipe Ingredients for Tortellini with Eggplant & Peppers

1 tbsp olive oil
1 medium eggplant
2 bell peppers
1 salt to taste
1 pepper to taste
4 cloves garlic
1/4 tsp crushed red pepper flakes
3 cups low-sodium vegetable broth
18 oz cheese tortellini
1/2 cup fresh flat-leaf parsley

Recipe Directions for Tortellini with Eggplant & Peppers

  1. Saute eggplant and peppers with salt and pepper for 6-8 minutes.

  2. Add garlic and red pepper flakes and cook one more minute.

  3. Add broth and tortellini. Cover and simmer over medium heat until the tortellini are cooked through and most of the broth is absorbed 12-15 minutes.

  4. Fold in parsley and 1/4 cup of parmesan, serve sprinkled with remaining parmesan.
