Recipe Ingredients for Tortellini and Broccoli Salad

5 cups cheese tortellini
8 cups broccoli florets
1/8 cup olive oil
4 tbls red wine vinegar
2 tbsp mustard
3 cloves garlic
3 tsp honey
4 tsp dried basil
1/2 tsp salt
4 scallions, sliced 1/2" thick
2 small red onion, chopped
8 roma tomatoes, diced (or 1 pint cherry tomatoes, halved)
3 oz (3/4 cup) grated romano cheese

Recipe Directions for Tortellini and Broccoli Salad

  1. 1) Boil water and cook broccoli and tortellini according to package directions. Rinse under cold water and drain.

  2. 2) In large bowl, mix oil, vinegar, mustard, garlic, honey, basil, and salt. Add tortellini, broccoli, onion, scallions, tomatoes, and cheese. Toss well.

  3. 3) Serve immediately or refrigerate for up to 24 hours.
