8 ounce Tortelloni Ricotta & Spinach
1 small onion
1 teaspoon garlic
1 teaspoon dried basil
1 red pepper
1/2 cup summer squash
1 small eggplant
1 teaspoon salt
2 tablespoon olive oil

Recipe Directions for torelloni ricotta & spinach with eggplant

  1. saute onion, garlic saute for 1 min

  2. add sliced squash, cubed eggplant and chopped red pepper saute for 5 min

  3. add basil salt and pepper to taste, 1/2 cup water saute for 5 min

  4. add cooked tortelloni

  5. serve
