fiber muffins! (without oil... used apple sauce(subbing for 6tbsp olive oil)

Recipe Ingredients for Tone it up orange raspberry fiber muffins

0.35 serving Florida Squeezed Orange Juice
0.25 cup Raspberries
6 oz Brown Rice Protein
2 oz Flaxseed
2 tsp Baking Powder
1 serving psyllium husk powder (2tbsp)
0.25 cup Apple Sauce Unsweetened Organics

Recipe Directions for Tone it up orange raspberry fiber muffins

  1. Pre-heat oven to 390 degrees F.

  2. Zest orange into a mixing bowl. Squeeze juice and pulp from the orange into the bowl. Place raspberries in a blender and mix until liquid. Pour into the bowl with the orange zest.

  3. In a separate bowl mix protein powder, flax seed and baking powder. Set to one side.

  4. Stir psyllium husk powder into the wet mixture. Let settle for 30 seconds to a minute. Pour in Olive Oil.

  5. Sift dry protein mixture into wet mixture slowly to avoid clumping. Add a little water if necessary to create a moist even batter. Pour batter into a muffin tray.

  6. Place in oven and bake at 390 degrees for 18 minutes or until fully risen and lightly browned.

  7. Remove from the oven and allow to cool.... ENJOY!!!
