Recipe Ingredients for Tomoato Soup

1 tablespoon butter
1 cup chopped onion (1 medium)
3/4 cup shredded carrot
1 tablespoon minced garlic
1 tablespoon minced shallots
1 teaspoon sugar
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
2 tablespoon basil, dried
12 oz Tomatoes, Sun-dried
29 ounce organic diced tomatoes, undrained
14 ounce fat-free, less-sodium chicken broth
3 oz spinach
10 tablespoons tomato paste

Recipe Directions for Tomoato Soup

saute veggies in butter. Add seasonings, diced tomatoes, chicken broth, spinach and tomato paste. Cook for 30 minutes on medium heat. Puree in small batches in blender. Return to pot or use a new one. Heat on low heat for another 30 minutes.
