When you can't eat tomatoes or garlic, this is a good bolognaise sauce just using stock and extra vegetables.

Recipe Ingredients for Tomatoless Bolognaise (soya mince)

5 oz soya mince
300 ml boiling water
5 grams bouillon - swiss vegetable, powder , to make into stock and rehydrate the soya mince
1 tablespoon olive oil
1 medium onion, chopped finely
4 oz carrots, sliced
4 oz bell pepper, chopped finely
3 oz celery, choppes finely
3 oz mushrooms, sliced
1 teaspoon worchestershire sauce
1 tablespoon balsamic vinager
2 grams Bay leaf
1 tablespoon dried mixed herbs
1 pint of boiling water
5 grams bouillon - swiss vegetable, powder
1 salt and pepper, season to taste

Recipe Directions for Tomatoless Bolognaise (soya mince)

  1. Rehydrate the mince with the 300ml water and stock powder.

  2. Heat oil in a large saucepan with lid and fry off the onions till soft, then add all other vegetables and lowering the heat saute for 8 - 10 minutes with lid on, then add the worchestershire sauce and balsamic vinegar stir well and then add the stock the mince herbs, bayleaves, stir well and simmer on a low to medium heat for 20-30 minutes or until vegetables are how you like to eat them, then season to taste with salt and pepper and serve on a bed of spaghetti.
