Recipe Ingredients for Tomatoes and Zucchini

1 spray , about 1/3 second (1 NLEA serving) Original Cooking Spray
1 large Onions
1 clove Garlic
14.5 oz Tomatoes Stewed No Salt Added
2 medium Squash, Summer, Zucchini, Includes Skin
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
0.5 tsp, ground Basil, Dried
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Tomatoes and Zucchini

  1. Spray a large skillet with nonstick spray coating. Cook onion and garlic in skillet till onion is tender but not brown, stirring occasionally.

  2. Stir in undrained tomatoes, zucchini, green pepper, basil and pepper. Cover and simmer for 10 minutes or till zucchini is tender, stirring occasionally. Uncover and simmer about 5 minutes or till most of the liquid evaporates.

  3. Poor into 6 individual serving bowls. Sprinkle with Parmesan cheese. Makes 6 servings
