This is what you do when you have more tomatoes in your garden than you know what to do with.

Recipe Ingredients for Tomatoes & Hot Rice

15 large tomatoes
3 medium onions
3 cloves of garlic
3 dried Thai peppers
1/4 cup olive oil
2 T fresh basil
1 T fresh sage
1 T fresh parsley
2 T fresh oregano
1 T sugar
3 cups brown rice

Recipe Directions for Tomatoes & Hot Rice

  1. Take the garlic, onions and dried peppers and cut up in real small pieces. Put in a large stew-type pot. Add the olive oil and saute until onions are transparent.

  2. While that is going on wash and core the tomatoes, cutting out any tough places on the skin. Cut up into small chunks and add to the garlic, onions and Thai peppers.

  3. Cook down into a liquid and add 1 T of sugar, and the spices..stiring frequently. Add in the 3 cups of rice and cook until rice is tender.

  4. This tastes good with 1 tsp of Parmesan cheese sprinkled on top.
