This is the winter version of the kid's favorite chinese food meal.

Recipe Ingredients for Tomatoes and Eggs-Winter version

28 ounce whole tomatoes
5 large eggs
1 tbs canola oil
2 tsp sugar
1/2 tsp salt

Recipe Directions for Tomatoes and Eggs-Winter version

  1. heat canola oil in wok

  2. beat eggs, add to oil and cook (scramble if you want) until set. Remove from wok and set aside.

  3. Add tomatoes to wok and cook until breaking down. Stir in sugar and salt to taste. Stir in eggs.

  4. Serve with rice.
