Delicious for brunch, lunch or a light weekday supper. Ripe tomatoes are sauteed and eggs and cheese added.

Recipe Ingredients for Tomatoes and Eggs

1 tbsp olive oil
4 Tomatoes, Red, Ripe
1/2 tsp salt
1/4 tsp pepper
4 eggs
1/2 c cheddar cheese, grated

Recipe Directions for Tomatoes and Eggs

  1. Heat olive oil in lg skillet. Slice tomatoes thickly, add to pan covering the bottom in one layer. sprinkle salt and pepper over tomatoes. Cook over med high heat for 5-6 minutes, until tomatoes start to soften.

  2. Crack eggs one at a time, deposit on top of tomatoes, ideally in the nooks and crannies between tomatoes. Add a small amount of salt and pepper, then top with grated cheese.

  3. Place lid on pan, lower heat, and cook until cheese is melted and eggs are cooked to your liking.
