Sub Benecol for butter. This can be jazzed by adding any of these to the tomatoes, basil, onions, carrots, celery, or garlic. To jazz up the dumplings try adding rosemary, or tarragon. Also try a splash of balsamic vinegar once the dumplings are done.

Recipe Ingredients for Tomatoes & Dumplings

56 ounce stewed tomatoes
2 tablespoons butter
2 teaspoons sugar
2 cups bisquick baking mix
1/4 cup egg beaters
3/4 cup milk

Recipe Directions for Tomatoes & Dumplings

  1. Combine tomatoes, butter, sugar and seasonings. Bring to low boil.

  2. Combine dumpling ingredients and drop dough by teaspoon, in a single layer, on top of tomatoes.

  3. Reduce to low and cook uncovered for about 5 minutes.

  4. Cover and cook for about 10 minutes.
