Recipe Ingredients for Tomatoes with Cucumbers & Yogurt

1/4 cucumber, peeled, seeded and diced
1/2 plum tomatoes, seeded and diced
1/4 green onion, minced
1/2 tbsp mint, fresh
1/2 tbsp parsley
1/2 clove garlic, finely chopped
1/4 cup yogurt, low-fat plain

Recipe Directions for Tomatoes with Cucumbers & Yogurt

  1. Note: to seed tomatoes, cut them in half crosswise, hold each have over a bowl and squeeze and shake gently to dislodge the seeds.

  2. In a bow, combine the cucumber, tomatoes, green onion, mint, parsley, garlic, yogurt, salt and pepper. Refrigerate for at least 1 hour to allow the flavors to blend. Serve chilled or at room temperature.
