this is a great way to use tomatoes that are a little older or maybe not at the perfect sweetness you would want for a fresh salad. Goes great with pasta or just on some toast with avocado.

Recipe Ingredients for Tomatoes confit

1 quart cherry tomatoes
1 quart yellow cherry tomatoes
4 cloves garlic
1/4 tsp salt
2 tsp ground pepper
1 tsp sugar
3 tbsp olive oil
10 leaves of fresh basil

Recipe Directions for Tomatoes confit

  1. preheat oven to 350 F

  2. place the tomatoes in an oven-safe dish so that they all snugly touch the bottom

  3. chiffonade basil and set aside

  4. smash the garlic cloves with the face of your knife so that the cloves are still whole... just a little worse for the wear.

  5. cover tomatoes with garlic, salt, pepper, sugar and olive oil and toss well.

  6. cook tomatoes for 30-40 minutes (until wrinkled and tender).

  7. During the last 10 minutes if the cooking process add the basil (this will also work with rosemary).

  8. let cool before serving (those fresh tomatoes get hot!)
