Summer soup made with ground tomatoes

Recipe Ingredients for Tomatoe soup

1 cup scallions
1 cup carrots
1/2 cup celery
1 cup sweet red pepper
450 g potatoes
5 1/5 cups diced tomatoes
8 cups water
1 cup parsley

Recipe Directions for Tomatoe soup

  1. Chop scallions, carrots, celery, sweet red pepper, cube potatoes ( 1 cm )

  2. In a pot mix vegetables with water and salt and bring to aboil. Reduce heat to low and cook till veggies are tender.

  3. In a blender ground one can ( 796 ml ) Blue menu diced tomatoes, no salt added and add to the soup.

  4. Bring to a boil again and...enjoy

  5. Serve cold garnished with parsley or lovato
