This is a great omlet i came up with using left over ingredients I had lying around the house from a stew and salad I made last night. I had it with one slice of multi grain whole grain bread and a sliced granny smith apple. Yumo! And its healthy too! ha!

Recipe Ingredients for Tomatoe & Pepper Omlet with feta cheese

1/4 tsp canola oil
3 cherry tomatoes, halfed
1/4 yellow bell pepper, diced into small chunks
1/2 c egg subistitue
1 tablespoon feta cheese
1 salt and pepper to taste

Recipe Directions for Tomatoe & Pepper Omlet with feta cheese

  1. Spray a nonstick pan with pan spray or a mister filled with canola oil, add tomates and bell peppers, salt to season if desired and saute until soft over medium heat.

  2. Add the vegtables for egg subistitue, mix. Wipe the pan clean with a paper towel and respray the pan with oil. Return the pan to burner on medium heat let it warm up for a little bit and pour the egg mixture into the pan.

  3. Shake and swirl the pan constantly moving the egg product around the pan pushing the cooked egg into the center to make a firm but still moist omlet.

  4. Add 1 tablespoon of feta cheese when the omlet is almost finished cooking and fold it in half. Turn off the burner and allow the cheese to melt in the pan.
