Couscous with Diced Tomatoes and Fresh Vegetables

Recipe Ingredients for Tomatoe Couscous with fresh vegetables

1/2 tsp Olive Oil
1/2 tsp Garlic
1/4 cup Onion, Diced
1 cup Couscous
8 Olives, Sliced
1/4 cup Cannellini Beans
1/2 cup Mushrooms, Sliced
1/4 cup Cherry Tomatoes, Sliced
1/2 can Artichoke Hearts Canned
2 cups Diced Tomatoes
1/2 cup Vegetable Broth
1 ounce Basil Leaves, Fresh

Recipe Directions for Tomatoe Couscous with fresh vegetables

In a large saute' pan, saute' garlic and onions until golden brown. Add sliced Mushrooms, Beans and Vegetable Broth. Cover and simmer for 5 minutes. Add Diced Tomatoes, Artichokes, Cherry Tomatoes, Olives, Couscous and Basil. Cover and simmer on low for 8 minutes or until couscous is cooked. Serve with ground pepper.
