Recipe Ingredients for Tomato zucchini soup

4 zucchini
2 squash
2 cups chopped stewed tomatoes
1 cup water

Recipe Directions for Tomato zucchini soup

  1. Add stewed tomatoes and water and sliced zucchini and squash to a dutch oven and simmer till cooked to your liking. I prefer my veggies to still be slightly firm. Not completely overcooked.

  2. After veggies are cooked add to your blender two cups at a time, blend and store in the fridge for a fast snack or meal.
