Recipe Ingredients for Tomato Zucchini Ricotta Pie

1 Pillsbury pie crust
4 1/2 oz sweet onion (about 1/2 medium), sauteed
4 oz zucchini, shredded
13 oz tomato, sliced
12 oz ricotta cheese, part skim
2 T fresh basil
2 T fresh oregano
1 T fresh thyme
1/8 c parmesan cheese
1/8 t salt
1/8 t pepper

Recipe Directions for Tomato Zucchini Ricotta Pie

  1. prebake the crust in a 9 inch pie pan for about 8 minutes until golden brown. let cool slightly.

  2. layer the grilled onions, half of the tomatoes, the shredded zucchini and half of the parmesan cheese. sprinkle with salt and pepper.

  3. add thick layer ricotta, season with salt and pepper.

  4. sprinkle with fresh chopped herbs or spread a layer of prepared pesto.

  5. arrange the remaining tomato slices, sprinkle with the remaining parmesan cheese, salt and pepper.

  6. bake at 350 until golden brown and warmed through, about 20-30 minutes.
