Recipe Ingredients for Tomato & White Bean Pasta Salad

1 Serving Tomatoes
0.25 cup (cooked) Cannellini White Kidney Beans
0.5 cup, strips Peppers, Sweet, Red
270 grams Spinach
0.5 1tsp Olive Oil
2 Teaspoon Vinegar
1 clove Garlic
2 tbsp Parmesan, Grated Cheese
4 oz Ronzoni Healthy Harvest Whole Wheat Penne Rigate Pasta

Recipe Directions for Tomato & White Bean Pasta Salad

  1. Cook pasta according to directions, omitting salt.

  2. While pasta is cooking, heat oil in a large nonstick skillet over medium-high heat. Add tomatoes and cook 3 minutes or until skins begin to wrinkle and burst.

  3. Add garlic and cook 1 minute, stirring constantly.

  4. Add bell pepper, beans, and spinach. Cook 3 minutes or until spinach is slightly wilted.

  5. Stir in basil (optional), vinegar and pasta. Cook 2 minutes or until thoroughly heated.

  6. Sprinkle evenly with Parmesan

  7. Divide into 2 portions
