Tomatoes, carrots, sweet potato, beans and kale

Recipe Ingredients for Tomato vegetable soup

1 tbsp canola oil
2/3 cup green lentils
3/4 cups chickpeas
1 cup onion
1 cup celery
3 cloves garlic
1 1/4 cup carrots
4 cups vegetable broth
8 cups water
28 fl. oz. canned tomatoes
6 cups kale
4 cups sweet potato

Recipe Directions for Tomato vegetable soup

  1. Fry celery garlic, and onion in oil.

  2. Add broth and water.

  3. Add vegetables and beans except kale; bring to a boil.

  4. Reduce to low heat and simmer 30 minutes.

  5. Add kale and simmer 5 more minutes.
