Recipe Ingredients for tomato, tofu and bulgar

0.5 package Blue Menu Tofu Extra Firm
6 clove Garlic
0.5 cup chopped Green Bell Pepper
1 Can Chick Peas
3 stalks Celery
3 cup Tomatoes Whole Plum Italian Style
1 cup Bulgar Wheat
6 tbsp chopped Shallots
0.5 cup Coriander Leaves
1 cup pieces Mushrooms
3 1tsp Olive Oil

Recipe Directions for tomato, tofu and bulgar

fry/sweat celery, shallot, green pepper, and mushrooms for about 5 min in olive oil, in a pot over medium/high heat. Add garlic and bulgar, mix well. Then add tomatoes, crushing them as you put them in along with the juice, chick peas and tofu, and spice it up as you wish. mix well, and cook over medium heat for 20 to 30 minutes. You may need to add more tomato juice, or water. Just before serving, add coriander (optional) and serve however you want.
