Tomatoes with ricotta, eggs, rosemary and bread cubes. A great way to use summer tomatoes and old bread.

Recipe Ingredients for Tomato Strata

8 cups tomatoes, diced
16 oz. Cracked Wheat Sourdough Bread, cubed
2 tsp olive oil (use spray)
6 oz. Sargento Light Ricotta Cheese
1/2 tsp salt
1/2 tsp black pepper
2 tbsp rosemary, minced
2 eggs
1/2 cup skim milk
6 oz. provolone cheese, shredded

Recipe Directions for Tomato Strata

  1. Preheat oven to 400ºF.

  2. Place bread cubes on 2 baking sheets sprayed with olive oil. Spritz bread with oil and place in oven to toast for 15-20 minutes.

  3. Place tomatoes, rosemary, salt and pepper in a large bowl, toss well.

  4. Remove bread cubes from oven. Spray a casserole or baking dish with oil. Spread 1/2 of bread in bottom. Top bread with 1/2 tomatoes. Add ricotta by small spoonfuls, distributing evenly over the mixture.

  5. Top with remaining bread cubes, followed by remaining tomatoes. Beat eggs with milk and any tomato juice remaining in the bowl. Pour evenly over mixture in baking dish.

  6. Top with shredded cheese and bake for 30-40 minutes or until cheese is melted, browning and bubbling. Remove from oven and allow to sit for 10-15 minutes before serving. (1 serving=4WW pts.)
